Cipolle bianche ripiene

Un antipasto insolito e sofisticato che piacerà anche a chi non ama particolarmente le cipolle perchè racchiude un insieme di sapori e profumi che legano perfettamente insieme. Una sinfonia perfetta! Perfetto in estate servite tiepide ed in inverno servite calde e profumate. La cipolla ideale per questa ricetta e la La Cipolla Dolce delle Cevennes , originaria della Francia. La sua polpa bianca è molto succosa e zuccherina con un retrogusto di castagna, il bulbo è sferico e di color biondo madreperlato.

Tempo di preparazione 1 ora e 30

Ingredienti per due persone

  • 2 cipolle bianche (cipolla dolce delle  Cavennes, o comunque cipolla bianca dolce non troppo piatta)
  • Sale grosso tanto quanto serve per riempire il fondo di una piccola pirofila che contenga a misura le cipolle
  • 20 grammi di burro
  • 2 tuorli
  • 2 foglie di salvia
  • sale e pepe
  • tartufo nero (opzionale)

Per la besciamella

  • 30 grammi di burro
  • 1 cucchiaio di farina
  • 200 ml di latte
  • 300 gr. di gruviera a parmigiano reggiano
  • sale e pepe

Preparazione

In una piccola pirofila disporre sul fondo 2 dita di sale grosso su cui adageremo le cipolle intere. Mettiamo la pirofila in forno ventilato a 180 gradi per circa 1 ora, fintanto che i rebbi di una forchetta entrino agevolmente nella cipolla. 

Lasciare raffreddare le cipolle quindi disporle sopra un tagliere e, con un coltello affilato, tagliare la calotta. Con l’aiuto di un cucchiaio estrarre l’intera cipolla, adagiarla su un tagliere e rimettere il guscio esterno nuovamente sul sale. Tagliare la polpa della cipolla a striscioline. In una padella fare sciogliere una noce di burro con la salvia e fare appassire la cipolla finche tenera e di colore caramello. Salare e pepare.

Prepariamo la besciamella: in un pentolino dai bordi alti fare sciogliere il burro, unire la farina e mescolare con una frusta quindi unire il latte. Continuare a mescolare fino a quando la salsa non si è addensata. Aggiustare di sale e pepe. Incorporare due cucchiai di formaggio precedentemente grattugiato.

Con un cucchiaio riempire i gusci delle cipolle con le striscioline di cipolla facendo un piccolo spazio nel centro dove adegeremo il tuorlo di un uovo. Se desiderate un tocco di raffinatezza in più, sopra l’uovo disponiamo qualche fettina di tartufo bianco.

Con un cucchiaio copriamo leggermente con la besciamella e sulla superficie grattugiamo ancora del formaggio.

Mettiamo nuovamente in forno, per fare dorare la superficie della cipolla. Pochi istanti per non cucinare l’uovo. Ci si può aiutare con il grill.

Impiattare e servire tiepido o caldo con crostini di pane.
