CIAO!

Hello, I’m Mariella, and one of my passions is food. The pleasure of cooking was handed down to me by my grandmothers and more closely by my mother, all excellent cooks.  

The curiosity to discover and try new things led me to experiment, research, share food. As a young girl I received a journal from my grandfather Francesco where I started writing recipes. Reading now the first pages with the recipes are written in a little girl’s handwriting makes me smile, but today, that the journal no longer even has a blank page, I realise how many traditional Italian and foreign dishes I have come into contact with. This cookbook, Adocchio, wants to share the recipes that have been handed down to me and that I have always cooked and are present on my table.

Adocchio is my way of interpreting recipes.

The precision of the weights and ingredients can be overcome by imagination, by the seasonality of the raw materials, by the ingredients available. An example are the gnocchi. My grandmother prepared them by adding as much flour to the potatoes as needed to obtain a compact and soft dough. I never knew how much flour was needed per kilogram of potatoes, it was calculated ‘adocchio’ (By and large)!
