The Perfect Recipe for Tender and Flavorful Fish

Some recipes are truly impressive because of their simplicity. Salt-crusted snapper is one of them. All you need is an exceptionally fresh fish, coarse sea salt, and a hot oven to achieve tender, juicy, and beautifully fragrant flesh. The salt crust doesn’t make the fish salty; instead, it creates a natural shell that locks in moisture during cooking, preserving the delicate flavor and texture of the fish.

Elegant, impressive, and surprisingly easy to prepare, this recipe is perfect for both a special dinner and a family lunch.

Ingredients (Serves 4)

    • 1 whole snapper (about 1.2–1.5 kg / 2½–3¼ lb), gutted but with the scales on
    • 2 kg (about 4½ lb) coarse sea salt
    • 1 organic lemon
    • 2 sprigs of fresh rosemary
    • A few sprigs of fresh parsley

To serve

    • Extra virgin olive oil
    • Freshly squeezed lemon juice
    • Lemon wedges

Method

Prepare the Fish

Rinse the snapper quickly under cold running water and pat it dry thoroughly with paper towels. Stuff the cavity with a few slices of lemon, the rosemary, and the parsley.

Prepare the Salt Crust

Line a baking tray with parchment paper and spread a layer of coarse salt about 1 cm (½ inch) thick. Place the snapper on top of the salt bed and completely cover it with the remaining salt, pressing it gently with your hands so the crust adheres well.

Baking

Preheat the oven to 200°C (400°F).

Bake the snapper for:

    • 30–35 minutes for a 1 kg (2.2 lb) fish
    • 40–45 minutes for a 1.5 kg (3.3 lb) fish
    • 50–55 minutes for a fish weighing over 2 kg (4.4 lb)

Once cooked, let the fish rest for about 5 minutes before breaking the salt crust.

Breaking the Salt Crust and Filleting

Using the back of a knife or a small meat mallet, gently crack the salt crust.

Brush away the salt and lift off the skin—it will come away easily along with the scales. Using a fish spatula or a fish knife, carefully lift off the first fillet and transfer it to the serving plates. Gently remove the backbone, then lift away the second fillet. Finish with a drizzle of high-quality extra virgin olive oil and, if you like, a few drops of fresh lemon juice. Snapper has such a delicate flavor that it doesn’t need anything else.

Adocchio Tips

  • Always leave the scales on. They protect the flesh during cooking and make it incredibly easy to remove the skin once the fish is done.
  • The salt doesn’t penetrate the flesh. The crust acts like a natural oven, trapping heat and moisture so the fish stays wonderfully tender and juicy.
  • Keep the seasoning simple. A little rosemary, parsley, and lemon are all you need. The snapper should remain the star of the dish.
  • Let it rest. Allow the fish to rest for five minutes after baking. This helps the juices redistribute, making every bite even more succulent.
  • The perfect pairing. Serve with roasted potatoes or seasonal vegetables and enjoy with a crisp, mineral-driven white wine such as Vermentino, Lugana, or Soave.
