Pan-Fried Turnips

Turnips are vegetables with humble origins, where both the roots and flowers (the famous turnip greens) are eaten. Turnips are tubers, notoriously not too beautiful, white, pink, green and red. Personally, I am fascinated by those with purple shades which, when you slice them, create beautiful, hypnotic circles. The flavor of turnips is very distinctive, sweet prevails. But how are turnips cooked? they can be served raw in salads, but there are many other ways to make this vegetable appealing all year round, even if the ideal seasons to consume it are springĀ and autumn. Below is the recipe for pan-fried turnips, a tasty side dish suitable for meat, fish and cheese dishes. Preparation time 45 minutes Recipe for 2 servings
    • 475 gr Turnip
    • extra virgin olive oil
    • 2 sage leaves
    • salt and pepper
    • vegetable broth
Method

Wash the turnips carefully, peel them and cut them into slices about half a centimeter thick.

Put a good amount of oil in a pan, add the sage leaves: when it sizzles, add the turnips, season them, add salt and pepper and leave them to cook over a low heat for about 15.20 minutes, until they are tender. If necessary add a little broth.

They are excellent both hot and cold to accompany cheeses and meat.
