Homemade Poached Peaches

Some recipes never go out of style because they let the quality of the fruit speak for itself. Homemade poached peaches are one of them. Unlike the classic canned peaches in syrup, this recipe gently poaches fresh peaches in water, white wine and lemon peel, enhancing their fragrance and natural sweetness without masking their delicate flavor. I make them often because they are incredibly versatile. They are delicious served well chilled on their own, with a scoop of vanilla ice cream, Greek yogurt or whipped cream. They can also be transformed into a more elegant dessert with amaretti cookies and zabaglione, or simply served with melted dark chocolate.

Why Make Homemade Poached Peaches?

Making poached peaches at home is easy and allows you to enjoy the authentic flavor of ripe summer fruit without unnecessary added sugar. Personally, I don’t add sugar to the poaching liquid because, when peaches are perfectly ripe, they are naturally sweet. If you prefer a sweeter taste, you can add one teaspoon of sugar, but I can assure you it isn’t necessary. For the best results, choose percoca peaches, or any ripe but still firm yellow-fleshed peaches.

Ingredients (Serves 4)

    • 4 percoca peaches (1 per person)
    • 500 ml water
    • 500 ml dry white wine
    • Peel of 1 organic lemon
    • Optional: 1 teaspoon sugar

Instructions

Wash the peaches thoroughly and cut them in half. You can remove the pits before cooking or wait until the peaches have softened—both methods work equally well. In a saucepan, combine equal parts water and dry white wine, then add the lemon peel. If desired, stir in one teaspoon of sugar. Bring the liquid to a gentle simmer and carefully add the peaches. Cook for about 25 minutes, until they are tender while still holding their shape. Remove the peaches carefully and allow them to cool completely. Store them in their poaching liquid until ready to serve.

Serving Suggestions

Homemade poached peaches are delicious:

    • on their own, well chilled;
    • with a scoop of vanilla ice cream;
    • served with Greek yogurt;
    • with whipped cream;
    • with crumbled amaretti cookies;
    • with homemade zabaglione;
    • with melted dark chocolate.

Storage

Keep the peaches immersed in their poaching liquid in the refrigerator for 2–3 days. After resting overnight, they become even more fragrant and flavorful.

    • Choose peaches that are ripe but still firm.
    • Avoid overcooking them, or they may lose their texture.
    • Don’t discard the poaching liquid—it is delicious for flavoring fruit salads, cakes or other desserts.
    • Always serve the peaches well chilled to fully appreciate their delicate flavor.
