Salmon: how to cook it whole: baked!

 

Living in a seaside town has its advantages especially if you like fresh fish. Knowing the times of when fishing boats return to the marinas to sell the catch of the day is priceless. And so I often find myself at the right time in the marina of Dragør, Copehagen, to buy some freshly caught fish and take a nice walk on the beach. Today I found two salmons. How to prepare them? I baked them! Exquisite, light and very fresh.

Ingredients

  • 1 salmon of about 1 kg – the fish must be fresh, with the eye still vivid
  • thyme, celery
  • Lemon
  • salt, pepper
  • extra virgin olive oil

Preparation

  1. Rinse the salmon, which has already been released, and dry thoroughly
  2. Place it in a baking tray lined with parched paper
  3. Cut a slice of lemon and insert it into the belly along with a teaspoon of coarse salt
  4. Place some celery on the bottom
  5. Salt and pepper the surface of the fish
  6. Put it in a convection oven, already warm, at 200 degrees for 30 minutes
