Roasted Giarratana onion

A very simple side dish, very good, very easy to prepare and certainly effective. The white onion of Giarratana is a typical Sicilian variety characterized by a sweet and not at all pungent flavor and by a considerable size. It is grown in the territory of Giarratana, Ragusa on the Ibleo plateau. It is a product included in the list of traditional Italian food products of the Ministry of Agriculture, Food and Forestry. It is sown at the end of October and is harvested between July and August. Every year in August the traditional fair takes place in Giarratana where you can taste various onion-based dishes accompanied by excellent wine.

Method

  1. Peel the onions, rinse them under running water, dry them and cut them in half

  2. Arrange them in a baking dish with the cut side facing up, season with salt and pepper and drizzle with a drizzle of oil.

  3. Bake in a preheated oven at 180 degrees for about 40 minutes.

  4. The onions must be very soft, they must melt in the mouth. as well as being very good they are also very beautiful.
