FISHING IN THE NORTH SEA – BAKED SOLE

Recently I had the privilege of seeing fishing boats arrive on the beach with nets full of catch. I’ve never been able to buy fresh fish by the sea! You have no idea what perfume he smells like, how firm and shiny the fish is. The net fishing is a ritual that keeps traditions intact, carried out by men who know and love the sea, and the wind . 

With such a fresh fish I had no hesitation on how to cook it: after removing the guts and liver and cut off the head, I simply cooked it like this. Fantastic!

Preparation

  1. Wash the sole, already clean, under the current water.
  2. Dry it and arrange it on an oven tray lined with baking paper
  3. Cut a slice of lemon to be placed in the gill
  4. Salt and pepper the surface of the fish
  5. Sprinkle with parsley
  6. Put it in a fan oven, already hot, at 200 degrees for 10 minutes

After cooking, take care of the fish and put it in a plate. Serve with a drizzle of extra virgin olive oil. You can served it with raw seasonal vegetables, baked potatoes or grilled vegetables.

Notes

Cleaning the fish is simple. you have to make an incision under the gill and remove the guts and, if you want, remove the head. rinse with water.
