An inviting dish, easy to prepare that combines taste and lightness. Recipe stolen from my uncle, who used to make it in the summer when we were all together at the lake! It can be combined with raw or cooked vegetables. absolutely exquisite, try it!
Ingredients
Ingredients for 4 people
- 8/10 Chicken pieces (thighs, under-thighs) stripped of skin
- Herbs – sage, rosemary, garlic, dill, chili pepper
- Salt
- Extra virgin olive oil (for a great oil click here)
- 1/2 cup white wine
Preparation
- Strip the chicken pieces from the skin, rinse and dry them
- Put the chicken in a non-stick frying pan with plenty of herbs
- Salt them
- Cover them with a lid and cook over very low heat. The chicken cooking will release a lot of water.
- After about 35/40 minutes remove all the herbs and the chicken water, put the pan back on a hot heat, add the wine and allow to evaporate completely.
- Always over a high heat add the oil, cover with the lid and after 1 minute turn off the heat and leave to rest for a couple of minutes.
- Serve it warm
