COLD MELON RISOTTO

Melon is a fruit that makes you feel in summer, colorful and cheerful. Here I propose it paired with cold rice for a super summery dish, appetizing and tantalizing! The first time I tasted it was in the middle of summer, with my parents in an isolated restaurant in the middle of the meadows, full of colorful flowers, surrounded by the beautiful Dolomites. I was a little girl and even today I remember the amazement and the pleasure of the first taste. 

Ingredients for 4 people

  • 350g carnaroli rice
  • 1 melon
  • 2 tbsp Worcestershire sauce (a little more if you like spicy)
  • 2 tbsp extra virgin olive oil (for a good oil click here)

Mayonnaise 

  • 1 egg plus 1 yolk
  • 300ml. sunflower or olive oil
  • a salt outlet
  • 1 lemon squeezed

Preparation

  1. Bring a tall, large pot of water to the boil. When it reaches the boil add2 spoons of salt, then pour in the rice that will have to cook about 15 minutes. The water will have to be a little saltier than normal, because the rice will be cooled under running water.
  2. Cut the melon in half, remove the seeds, slice it and cut it into small pieces that we will put in a schoolboy. Sprinkle with worcester sauce and let it drain.
  3. We prepare the mayonnaise: in the mug of a food processor we put the whole egg and the yolk at room temperature, the salt and the lemon juice. We add slowly the oil until it is finished and wait a few seconds for it to be fully absorbed.  It turns out : we will have a velvety and thick sauce.
  4. Drain the rice and cool it under the cold current water.
  5. At this point we transfer the rice to a bowl, season with a drizzle of extra virgin olive oil, add the cut melon and two to three tablespoons of mayonnaise. Mix carefully and allow to cool in the refrigerator for at least a couple of hours.

Notes

You can make mayonnaise by hand. My grandmother made it this way: As she sat, she placed a bowl on her lap, containing egg yolks, and holding it firmly with her legs began to mix with a clockwise whisk while with her free hand she added the oil flush. When the sauce reached the desired consistency it added salt and lemon. Very good!!! (great exercise for the arms!) to see how to click here
