Cherry tomato confit

Confit tomatoes are delicious caramelized tomatoes, very easy to prepare, cooked at low temperature in the oven for  long time. Perfect to combine with meat and fish, to be spread on the surface of a focaccia or to season  pasta or rice.

Preparation time 10 minutes plus 1 and a half hours of cooking

Vegetarian dish Ingredients

  • 1 kg Cherry tomatoes
  • fresh or dry thyme
  • some garlic gloves
  • salt and pepper
  • 1 teaspoon caster sugar
  • extra virgin olive oil (for an excellent oil tap here)

Method

Let’s start by washing the cherry tomatoes, then cut them in half by placing them on a baking dish with the cut side facing up. Distribute the salt, sugar and thyme evenly over the tomatoes. Cut the garlic cloves into slices and place them on the cherry tomatoes. Drizzle with a generous amount of oil and bake in a preheated oven at 150 degrees for 1 hour and a half.

In this preparation they are flavored with garlic and thyme, but they can obviously be prepared with other flavors such as oregano, marjoram or your favorite aromatic herbs, both fresh and dried.
