Aunt Angelina’s pudding is a delicious spoon dessert that cheers and warms the heart. Handed down for generations in my husband’s family and it is very appreciate by everyone; it is made with chocolate embellished with the taste of macaroons and enhanced by a waterfall of zabaione … Try!
Ingredients
- 1 liter of whole milk
- 1 hg of macaroons
- 4 tablespoons all purpose flour
- 4 tablespoons full of bitter cocoa
- 8 tablespoons sugar
- 1 whole egg
- lemon peel
For zabaione
- 4 egg yolks
- 4 tablespoons sugar
- 8 tablespoons marsala
Preparation
Chop the macaroons
In a saucepan combine the flour, sugar, bitter cocoa the chopped macaroon and turn to mix them.
Add the whole egg and mix it.
Take the zest of a lemon taking care not to take the white part and add it to the saucepan.
Add the cold milk, stirring to mix, then put the saucepan on the heat over a gentle flame and continuing to stir. When the pudding is thickened transfer it to a bowl and immediately cover it with film, placing it in contact with the surface of the pudding.
Allow to cool.
Let’s make the zabaione
Put the egg yolks and sugar in a glass bowl and whisk in one direction until a paste forms. Add half the wine and whisk again until you have a smooth, thick custard with just a few bubbles.
In a saucepan, which must stand inside another pot for cooking in a bain-marie, put the yolks and sugar. With a whisk whip slightly and add the marsala. Place the saucepan over the other a pan of simmering water . The water must reach half the internal pot. Place on the fire always whisking: with the warm and the air of your whisk the mixture of eggs sugar and marsala will begin to thicken. Be careful not to let the boiling water into the mixture. Whisk continuously until it is increased in volume; you will realize that the zabaione is ready when the whip leaves grooves and rows will form on the package.
Pour the zabaione over the pudding. Cover with cling film and put in the fridge for one night before serving.
