Ingredients for 4 people
- 6/8 tips of white asparagus
- 6/8 prawns
- 1 radicchio basket
- extra virgin olive oil
- lemon, salt and pepper
Preparation
- Wash the asparagus thoroughly and hold the tips (about 7 centimeters). The stems can be used to make a risotto or a velvety
- Finely slice each tip making many lists.
- Clean and wash the insalata.Dry it and cut it finely.
- Steam the prawns for 3 minutes
- Assemble in a bowl by mixing the asparagus and insalata and combining the prawns.Season with a citronette (oil, lemon, salt and pepper emulsified between them. For 60 ml of oil you will need 40 ml of lemon juice).
