Pumpkin and ginger velvety with fresh goat’s cheese – made with Thermomix

The autumn season I associate it with pumpkins. How many varieties there are, from the strangest shapes, striped, green and orange, all cheerful and very good. I prefer the Delicia variety with an ocher yellow interior, compact and with an intense, sweet taste. Many preparations are made with this splendid fruit; today I propose a simple and fast velvety with a bright color and a taste that definitely warms. Enjoy your meal!! Preparation time about 30 minutes

Ingredients for 3 servings

  • 600 gr of pumpkin cut into cubes
  • 1/2 thinly sliced white or golden onion
  • 2/3 centimeters of ginger cut into small pieces (optional)
  • 400 ml of vegetable broth
  • 100 gr quick cooking wholemeal spelled (10 minutes)
  • olio EVO (for an excellent oil tap here)
  • salt and pepper
  • a morsel of fresh goat cheese or alternatively some grated Parmesan cheese

Method

Place the pumpkin, onion and ginger in the Thermomix jug, add the broth and run speed 1 at 100 degrees for 15 minutes.

After the time has elapsed, blend the vegetables on speed 10 for 30 seconds.

Open the lid, insert the spelled and close. Reverse the direction of rotation of the knife group from forward (clockwise) to backward (anticlockwise) and set cooking for 10 minutes at speed 1.

After the time has elapsed, our cream is ready to be served on the plate.

Add a drizzle of extra virgin olive oil, a grind of pepper and place in the middle of the fresh goat cheese or, alternatively, sprinkle with Parmesan cheese.

Note

The recipe described can also be made without the thermomix. The quantities and times are the same. You will need to puree the vegetables with an immersion blender.
