Appetizer with smoked salmon

Very few ingredients are enough for a fresh appetizer, with a citrus scent to start a lunch or dinner in the name of lightness and taste.

Method

Wash the apple and the fennel and cut them into small cubes. Also cut the shallot and cut into cubes the salmon too.

Collect all the ingredients cut in a bowl, add a teaspoon of sesame seeds and mix well.

Make the citronette sauce: the citronette sauce is prepared by emulsifying 60 ml of oil with 40 ml of lemon juice, a pinch of salt and freshly ground pepper. Emulsify the ingredients well until you get a thick sauce. put a few tablespoons in the salad and mix well.

Fill a pasta mold with the salad and create a cake on each diner’s plate. Decorate with some sesame seeds, a slice of apple and a sprig of fennel and sprinkle with a little more citronette sauce.
