Very few ingredients are enough for a quick, delicious lunch that satisfies both the eye and the palate. Which? Smoked salmon, avocado, wholemeal bread and an egg. Lunch is served!
Ingredients for each diner
- 50 gr smoked salmon
- 1 avocado
- 2 slices of wholemeal bread
- 1 egg
- lemon
- salt and pepper
- extra virgin olive oil
Preparation
- Cut a ripe avocado in half, remove the central stone and then peel it, being careful not to break it.
- Slice each half starting from the short side and, with the help of your hands, stretch the slices like a snake.
- Take the salmon slices and arrange them inside the avocado crown.
- With your hands begin to roll giving the effect of a rose or a spiral.
- With a pastry cutter, make circles from the slices of bread and put them in the oven at 200 degrees for 3-4 minutes.
- Arrange the avocado and salmon rose on each circle of bread, add salt and pepper, add a few drops of lemon and a drizzle of extra virgin olive oil.
- Let’s prepare the poached egg: put on the fire a steel saucepan with water to which we add a spoonful of white vinegar and a few grains of salt. We bring to a boil.
- Break an egg into a cup.
- When the water boils, lower the heat and with the help of a whisk or a fork, create a vortex in the center where we will pour the egg. The vortex will help the egg white to stick to the yolk. Let it cook for a couple of minutes, then with the help of a slotted spoon remove the egg and place it on a toasted bread.
- Season it and serve together with the avocado and salmon.
